An Edible Mosaic ? Eggs, My Go-To Fridge Food

Ever find yourself staring blankly into the fridge?? Yeah, me too, probably at least once a day.? When I catch myself zoning out like this, it means a snack is in order.? (Yup, sometimes it means I?m bored?but generally it?s snack time.)? And I usually want something quick that can be grabbed out of the fridge and munched right away.


Eggs are by far my favorite go-to fridge food.? On the weekend I hard-boil a few and keep them in the fridge for quick snacking during the week, but if I have a couple minutes to spare on a weekday I?ll take the time to make them into something a little more special.? Fried eggs are always a winner and so are poached, as well as omelets (veggie-stuffed like this one is the way to go!).? But my new favorite way to enjoy eggs is scrambled the French way.

To make French-style scrambled eggs, heat a pat of butter in a nonstick skillet over low heat.? Beat however many eggs you want in a bowl with a splash of milk or cream, then add them to the skillet.? Cook the eggs (stirring constantly) until they thicken up into a creamy, almost custard-like texture consisting of soft curds (this will take about 10 to 15 minutes).? Turn off the heat and stir in half a pat of butter.? Sprinkle fresh minced chives on top along with a pinch of salt and pepper, and serve immediately.? Definitely not the most health-conscious recipe for eggs, but so good for a little weekend morning indulgence.? (Or the perfect late-night snack!)
